The Peaches of New York is a book on peach varieties that was published in 1917 by the New York State Agricultural Experiment Station. The book was written by Ulysses Prentiss Hedrick, an American botanist and horticulturist who was a professor at Cornell University.

The book contains descriptions and illustrations of over 400 different varieties of peaches that were grown in New York State at the time. Each peach variety is described in detail, including information on its history, appearance, flavor, and best uses.

The illustrations in the book are in color and were created by Charles Burton Tubergen, an American artist known for his botanical illustrations. The book also contains contributions from other horticulturists and botanists, including Orrin Morehouse Taylor and George Henry Howe.
